Job Description:

AmeriCorps VISTA is a national program where community members have the opportunity to serve in local nonprofits for one year helping eliminate poverty. In return for service, members receive a living allowance, health insurance and other benefits.

The VISTA position will serve within the International Rescue Committee Salt Lake City’s Spice Kitchen Incubator, a business incubator that brings together refugees and other disadvantaged community members interested in starting a full or part-time food business. The Food Business Scale-up VISTA will research and compile regulations and best practices and develop educational materials as well as financial tools to help entrepreneurs make informed business decisions as they move from part-time small-scale businesses (temporary and occasional events and catering) to full-time independent business ownership, including restaurants, food trucks, food trailers, food carts, and packaged product businesses.

RESPONSIBILITIES Specific duties include but are not limited to:

  • Understand city specific requirements and limits for operating a food truck in Salt Lake, Utah and Davis counties; update materials and staff and participant knowledge as changes occur.

  • Research best practices for successful marketing opportunities for mobile food units, restaurants and packaged products.

  • In coordination with the Small Business Program, develop financial and business tracking documents and systems from tested resources. Research potential sales locations for packaged products in Utah.

  • Research retail markets for packaged products and bakery products.

  • Compile store specific requirements for entrepreneurs to sell products at each location including but not limited to minimum orders, shelving and liability insurance.

  • Research start-up costs, lease agreements and locations for micro-restaurants in Salt Lake County.

  • Research equipment requirements and costs for restaurants.

  • Research best practices for supportive marketing materials.

  • Organize research into curriculum and resource guides for entrepreneurs to make informed business decisions.


  • Living Allowance ($990 a month pre-taxes)

  • At the end of year of service, the VISTA can choose an Education Award ($5,730) or End of Service Cash Stipend ($1,500)

  • Full-time service for one year.

  • Cannot be a full-time student (since it is full-time work, this is too difficult).

  • Possibility of minimum work or school part-time- not to interfere with service.

  • Some college experience.

  • At least 18 years of age.

  • General office and computer skills .

  • US Citizen or permanent resident.

  • Experience with diverse and vulnerable populations preferred.

  • Ability to communicate effectively with people of different linguistic backgrounds.

  • Highly organized with excellent time and space management skills.

  • Proficient in MS Excel and Word; database experience very helpful.

  • Patience, flexibility and a good sense of humor.

  • Fluency in written and spoken English, bilingual ability preferred in any refugee language.

  • Ability to speak passionately and articulately about IRC mission.

  • Professional, friendly, and courteous attitude a must.

  • Ability to drive a vehicle; must have proof of insurance and good driving record.
