This week's Spice-to-Go features Chef Cathy of Mama Africa who is introducing her new business venture: Mama Beignet!

Spice Kitchen Incubator is proud to feature its newest Spice-to-Go chef, Chef Cathy, owner of Mama Africa and Mama Beignet. She is a cultural activist, fashion designer, and interior designer in addition to being a fantastic chef. Promoting African diversity from fashion to cuisine is her passion. Established in 2007, Mama Africa offers Utah caterings, special event planning, and also has a line of hot sauces and drinks.

You can also order items individually. Plus, you can order the combo meal and add individual items in addition to your combo meal. “Mix-and-match as you please.”

Spice To Go Dinner “Options”

Entrées:

  1. Plantain-Cassava Plate (10oz):

    Sauteed okra, onions, garlic, and bell pepper; fried plantains; steamed cassava leaves alongside long-grain rice steamed with onion, garlic, tomatoes, carrots, and peas. (Vegan, contains peanuts, tree nuts, dairy free, gluten free)

  2. Fried Tilapia, Rice and Plantain Plate (10oz):

    Marinated and fried tilapia served with a Creole-seasoned tomato sauce. Served with jasmine rice and a half plantain. (Dairy free, gluten free)

Appetizer:

  1. Squash and Sweet Potato Leaf Soup (12oz):

    Yellow squash, sweet potato leaves, Creole seasoning and parsley in a vegetable-based broth. (Vegetarian, dairy free, gluten free)

  2. Vegetable Samosas (2pc):

    A mix of curry-cumin accented potatoes, peas, carrots, onion, garlic wrapped in tortillas and deep fried. (Vegan, contains gluten, dairy free)

Dessert:

Mikate, Beignets (5pc):

Crunchy orbs of fried dough dusted with powdered sugar. A Mama Beignet specialty! (Vegetarian, contains wheat, dairy free)

Beverage:

  1. Tangawisi, Ginger Punch (12oz):

    Ginger-mint juice, lightly sweetened and served chilled. (Vegan, dairy free, gluten free)

  2. Bissap, Hibiscus Flower Punch (12oz):

    Hibiscus flower juice, lightly sweetened and served chilled. (Vegan, dairy free, gluten free)

Add-on Sauces:

  1. Pili-Pili Hot Sauce (5oz):

    Mama Africa's signature hot sauce: Chile pepper, onion, garlic, vegetable oil, water, salt, vinegar. (Vegan, dairy free, gluten free)

    Spice Level: 8 (1-10)

  2. Ndungu Nzitende Hot Sauce (5oz):

    Mama Africa's newest hot sauce. Be prepared, it's spicy. Chile pepper, onion, garlic, vegetable oil, water, salt, vinegar.

Order Pickup

Please Note: Orders close Tuesday, October 18th at Noon! Orders can be picked up, hot and ready-to-eat from Spice Kitchen (751 W 800 S Salt Lake City, UT 84104) Thursday October 20th from 4-6:30pm.

When you arrive for pickup please text us (385-202-5207) with the first and last name on the order, if you would like disposable utensils, and a description of your vehicle when you arrive. We ask that you remain in your vehicles and a staff member or volunteer will run your orders out shortly.
